How do you keep paua alive?
As your Pāua arrives live straight from the ocean, you need to be kind. You're a pacific pacifist now! Put them in the freezer for 1/2 - 1 hour, or leave them in the fridge for 1-2 days until they've gone to sleep. This also helps tenderise the meat.
Is Paua native to NZ?
